What the register must contain in Italy

The part that does not vary.

DORA is a regulation, not a directive, so the Register of Information is the same document in every member state. All 15 reporting tables and all 120 columns of the official EBA dictionary (module 1.1.0, in force from 2025-03-31) apply to a firm in Italy exactly as they apply to one in Germany or Ireland.

That is worth stating plainly, because it is what makes the work portable. The columns Banca d'Italia expects are the columns every other EU supervisor expects. What changes is who receives the file, through which channel, and by when.
